Loaded with banana flavor and cinnamon, these muffins are great for breakfasts, brunch and snacks!
3 very ripe bananas
2T chia seeds mixed with 3T hot water
1/4 cup coconut oil, melted
1/2 cup non-dairy milk
1t vanilla extract
1 cup spelt flour
1/2 cup oats, plus more for sprinkling
1/4t baking soda
1/2t baking powder
Preheat an oven to 375 degrees. Spray a muffin tin with cooking spray, or line a tin with baking liners.
Chunk the bananas and add them to a mixing bowl. Using a hand mixture, blend the bananas until smooth. Add the chia seed mixture, coconut oil, milk and vanilla. Blend. Add the remaining ingredients and blend until just mixed--leaving a few dry pockets.
Spoon out the batter into prepared pan, about 2/3 full. Bake for 18 to 20 minutes, or until a toothpick comes out clean. Repeat with remaining batter.
Allow muffins to cool and then devour!
