Banana Protein Balls

These bites have a taste and texture similar to banana bread dough and peanut butter cookie dough. That's not a bad thing, right? But, unlike cookie dough, they're not loaded with processed sugars and flours. These are high in protein, and the natural sweetness from a banana lends the right amount of sweet and flavor.

Yields

15-20 Balls

Ingredients

1 ripe banana
1/3 cup coconut flour
2 scoops your favorite vanilla protein powder
1/3 cup natural peanut butter (look for a brand where the only ingredient is peanuts)
1/3 cup plant-based milk
6 sulphur-free apricots
1/2t vanilla extract
dash cinnamon
dash salt
1/4 cup roasted, unsalted nuts

Directions

Put all ingredients, except the peanuts in the belly of a food processor. Blend until all ingredients are incorporated together. You may need to stop and scrape the sides a bit. You also many need to add more milk, depending on how dry it gets.

Add the peanuts and pulse until they're chopped up and mixed in.

Grab a bit of the dough, and roll it into a ball the size of a ping pong ball. Repeat with remaining dough. Stores well in the freezer!
