Blackberry-Lemon Waffled French Toast Soldiers with Lemon Meringue Yogurt Dipping Sauce

Ever though of turning your waffles into French toast? This recipe is pack full of flavor and good ingredients to power you through a day.

For the Waffles
1 cup oats (gluten-free if needed)
1 egg
1T chia seeds
1/2 banana
1/2 cup almond milk
1/2t baking soda
dash salt
1t vanilla extract
2t lemon zest
1/3 cup blackberries, halved

For the French Toast
2 waffles
1 egg
1/4 cup almond milk
1t vanilla extract
1t lemon zest

Pre-heat your waffle iron.

Add all of the waffle ingredients expect the zest and the berries. Blend. Stir in the zest, and divide into two.

Working one at a time, add one portion of batter into the pre-heated waffle iron. Poke in a couple of berry halves. Cook until golden brown. Once cooked to your liking, remove and repeat with remaining batter.

Stir the egg, almond milk, zest and vanilla in a small bowl. Once both waffles have been cooked, cut into small logs, about three inches long and 1 1/2 inch wide. Plop the dippers a few at a time into the batter and allow to soak for a minute or two. 

Preheat a skillet and spray with cooking spray. Working a few at a time, add the dippers to the skillet. Cook for about five minutes, then flip. You want them to be golden brown. Repeat with remaining soldiers.

In two small bowls, add 1/3 cup of the Lifeway kefir or yogurt of your choosing. 

Divvy out the waffle soldiers and give each place a cup of yogurt.

Dip and enjoy!
