Making protein bars at home is incredibly easy! With this recipe you get to control the amount of sugars, flavors and so much more!

10 to 12 bars
1 1/2 cups rolled oats (gluten-free if necessary)
1/4 cup roasted, unsalted peanuts
1/2 cup peanut butter
1t vanilla extract
1 medium banana
1/2 cup almond milk (maybe more)
2T flaxseed meal
2T cacao or cocoa powder
1/2 cup vanilla or chocolate protein powder
1/4 cup dark chocolate chips
Preheat the oven to 35o degrees, and line an 8x8 baking pan with parchment paper.
In the belly of a food processor, add the oats and process until a fine powder is formed. Add it into a large mixing bowl. Add the peanuts to the food processor and pulse until chopped. Add the nuts in with the oats.
Working again in the food processor, add the peanut butter, vanilla, banana and almond milk. Process until smooth and creamy. (And try not to eat it all with a spoon.)
Add the flaxseed meal, cacao powder and protein powder to the bowl. Add in the peanut butter mixture and stir to combine. You may need to add more liquid depending on how dry the mixture is. Add the chocolate chips and stir to combine.
Press the dough into the prepared pan and ensure that everything is evenly distributed. Bake for 25 to 27 minutes, or until center is set. Allow to cool and cut into 10 to 12 bars.
