Coconut-Blueberry Energy Balls

Energy balls are an incredibly versatile and convenient snack. They pack a nutritional punch because they are full of nutrient-dense foods that will give you both quick and lasting energy.

16 Balls


1/2 cup coconut flour, sifted
1 heaping cup frozen blueberries
2 T coconut oil
2 T flaxseed meal
1/2 cup raw cashews
dash cinnamon and salt
1 scoop vanilla protein powder
1/4 cup water
1t vanilla extract
1/4 unsweetened coconut shreds


In the bowl of a food processor, add all of the ingredients except the shredded coconut flakes. Pulse until everything is well combined, but there are still small chunks of nuts. (You still want a bit of texture and crunch.)

In a small bowl, add the coconut shreds.

One at a time, take a small handful of dough and roll into a ball. You're going for the size of a golfball. Roll in the coconut shreds and press them in firmly. (Some will fall out.) Repeat with remaining dough.

Store in freezer and grab one (or three!) when a snack craving strikes!
