Cookie Dough Energy Balls

Who loves cookie dough?! Everybody...everybody loves cookie dough. These bites are made with common ingredients and are loaded with healthy protein and fats--designed to keep us going during those long workday afternoons. 

Cooking Time

15 Minutes


10 to 12 balls


2T dark chocolate chips
1/4 cup raw almonds
1/4 cup raw cashews
12 Deglet dates
1/2 cup rolled oats
1/3 cup vanilla protein powder
1/8t almond extract
1/2t vanilla extract
1/2t baking powder
2T almond milk or water
dash salt


Chop your dark chocolate chips into smaller pieces. Set aside.

In the food processor, add the almonds and cashews, and start. The nuts will get chopped up and eventually turn into a meal. Scrape the sides of the bowl and continue to process. You're making nut butter. This will take about 10 to 15 minutes. Periodically, scrape the sides of the bowl. When the nuts have formed a butter (it won't be too runny), you're ready to continue.

Add the dates, oats and protein powder and pulse until well combined. Add in the remaining ingredients, except for the chocolate chips, and process until everything forms a sticky batter. 

Sprinkle in the chips and pulse until everything is well combined. 

Grab about two tablespoons of the batter, and roll it into a ball the size of a golf ball. Continue rolling the batter into golf-ball-sized bites. You'll get about 10 to 12 balls...depending on how much batter you eat throughout this process.

Store in the freezer.
