Easy Gluten-Free Fish Sticks

Fish sticks make a regular appearance on dinner tables because they're easy. But, they can also be made at home with just a few simple ingredients!

1 pound white fish (cod works well)
3 cups gluten-free flake cereal (minimally sweetened)
1 t garlic powder
1 t paprika
2 eggs


Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.

Cut the fish into bite-size pieces, and set aside. In a blender, add the cereal and spices and blend until it's fine crumbs. (Alternatively, you could ad the cereal and spices to a plastic bag and smack it with a rolling pin until it's been pulverized.) Place the crumb mixture in a bowl.

Beat the eggs in a bowl.

Grab one fish nugget and dip into the egg bath. Shake off any extra liquid, and dip into the cereal crumbs. Thoroughly coat the fish in cereal. Place on the prepared sheet. Repeat until all nuggets have been breaded.

Bake for 15 minutes.

Serve with favorite dips or a salad!
