Who doesn't love pancakes?!
These are a far cry from the pancakes of my youth. They're not from a boxed mix--they are instead loaded with natural proteins, fats and healthy carbs, all designed to carry me through a busy morning.
1 egg white
2T vanilla protein powder
1/4 cup oats (gluten-free if needed)
2T chickpea flour
1T flaxseed meal
1/2 cup Greek yogurt or almond milk
1/2t baking powder
dash cinnamon and salt
Heat a skillet over medium-low heat.
In a blender, add all ingredients and blend until smooth. If you want a runnier batter, add more liquid. Spray your skillet with high-quality cooking spray. By the scant 1/4 cup fulls, pour out some batter. Once bubbles form, flip and cook a bit more. Repeat with remaining batter.
Top with nut butter, berries and other tasty toppings!
