Sometimes, you just don't want to eat protein powders. They're chalky, often lend their own taste, are expensive and don't bake well--often in pancakes. This recipe gets it's protein power from farmer cheese! Farmer cheese is very similar to cottage cheese, but has been pressed a bit further. Farmer cheese also contains healthful bacteria to promote a healthy gut. (If you don't have or can't find farmer cheese, swap in cottage cheese! Greek yogurt may work.)
1/4 cup rolled oats (gluten-free if necessary)
1 Lifeway Kefir Farmer Cheese Cup--plain or flavored. (Can swap in 1/3 cup cottage cheese)
1/2 t baking powder
2T almond milk
Heat a skillet over medium-low heat. Place all ingredients into a high-speed blender and blend until smooth. When the skillet is hot, spray with a high-quality cooking spray. By the scant 1/4 cup, add the batter into the pan. Cook for a few minutes, until bubbles start to form and bottoms are golden brown. Flip and cook through. Remove from the pan and repeat with remaining batter.
Delicious toppings include nut butter, berries, honey, more yogurt, or even a poached egg!
