Falafels are typically fried spiced-chickpea patties, but you can easily recreate this middle-eastern treat at home in your oven!
1T flaxseed meal
2T hot water
1 can chickpeas, drained and rinsed
1/4 white onion
1/2 cup chickpea flour
2T roughly diced cilantro
2 cloves garlic
dash cayenne pepper
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a small bowl combine the flaxseed meal and water. Let sit for 10 minutes. It will thicken and become gelatinous.
In the belly of a food processor, add all ingredients--including the flax mixture. Pulse until a dough begins to form, but keep a few chunks. Adjust salt and pepper to your liking.
Scoop out a small amount of the chickpea batter and roll it into a ball about the size of a ping-pong ball. Place on cookie sheet. Repeat with remaining batter. You should get 16 to 20 balls.
Bake for 20 minutes, or until bottoms are golden brown. Allow to cool and add to salads, wraps, sandwiches and more!
