Easy Vegan Queso Cheese

Ever tried making cheese sauce out of vegetables? It's easy!

Cooking Time

45 minutes (includes soaking time)


2 cups


1/4 cup raw cashews 
Really hot water
2 cups frozen cauliflower
1/3 cup almond milk
1/4 cup nutritional yeast
1/4 cup salsa (look for brands without any added sugar)
2 cloves garlic
1t paprika
2T lemon juice


Pour the really hot water over the cashews. Allow the nuts to soak for at least 30 minutes, and the longer you soak them, the softer they become. (That's a good thing!)

Place your cauliflower in a microwave-safe container and cook until soft. Once the cashews are soft and the cauliflower is cooked, add all ingredients to a high-speed blender. Blend until smooth. Adjust seasonings as necessary.
