Everything Waffles with Poached Eggs & Garlicky Kale

Take the trusted flavors from the everything bagel, and transform it into a waffle! (Bonus: These are ingredients you can feel good about using!)

For the Waffles
1t poppy seeds
1t red pepper flakes
1t fennel seed
1t granulated garlic
1t granulated onion
1t sesame seeds
1/2 cup pumpkin puree
2 eggs
6T brown rice flour (or oat flour)
2T almond flour
2T flaxseed meal
1/2t baking soda
dash salt
1T nutritional yeast

For the garlicky kale
olive oil
one bunch kale
2 cloves garlic, minced

For the Eggs
2 eggs


Preheat your waffle iron.

Add the first six ingredients in a small bowl and set aside. This is your everything spice. In a mixing bowl add the squash puree and eggs. Stir until just combined. Add the remaining ingredients. Stir until just combined. Once the waffle iron is heated, spray with cooking spray and add half the batter. Sprinkle on the everything spice. Close the waffle iron and allow to cook. Repeat with remaining batter. 

Keep waffles warm until ready to serve.

Preheat a skillet over medium heat. Add some olive oil. Take the kale, and remove the stems. Chop into medium-sized pieces. Once the oil is heated, add the kale. After about five minutes add the garlic and satuee for a minute or two more. 

Poach eggs

Once everything is done, remove the waffles from the oven. Top with half the kale and one poached egg. Scarf down.
