Gluten-Free Strawberry-Chocolate Banana Bread

Not too sweet but studded with chocolate chips and strawberry chunks, this version of banana bread is perfect for snacks, breakfasts or dessert!

Dry Ingredients
1 cup almond flour
1 cup chickpea flour
1/4 cup arrowroot starch
1t cinnamon
dash salt
1/2t baking powder
1/4t baking soda

Wet Ingredients
2 medium bananas, mashed
1T coconut oil, melted
1/4 cup plain kefir yogurt, or Greek yogurt
1 egg
1t vanilla extract
1T honey (optional)

1/2 cup small-diced strawberries
2 sliced-thin strawberries for the top (optional)
2T chocolate chips


Preheat your oven to 350 degrees. Line a loaf pan with parchment paper and coat it in high-quality cooking spray.

In a bowl, combine all dry ingredients. In a separate bowl, combine all wet ingredients. Combine the two and stir until just combined. Gently fold in the diced strawberries and chocolate chips. (Try not to over mix! It's ok to still have a little dry ingredients.)

Plop the batter into the prepared pan and smooth out. Push in the sliced strawberries if using. Bake the loaf for 50 to 55 minutes, or until an inserted toothpick comes out clean. Remove from oven and let cool completely. Slice and enjoy!
