Turmeric can do it all--decrease inflammation, boost brain function and help prevent diseases. When paired with banana and other warming spices, it creates a balance of sweet and spicy in a compact snack.
10 to 12 muffins
2 1/2 medium overipe bananas
1/4 cup coconut oil, melted
1 t vanilla
1/3 cup non-dairy milk
2 T maple syrup
1 cup brown rice flour
1/2 cup almond flour
1/4 cup flaxseed meal
1 t baking powder
1 1/2 t turmeric
1 1/2 t cinnamon
1/2 t ginger
1/4 t salt
Preheat the oven to 350 degrees. Line your mufin tin (six- or 12-cup) with muffin cups, and spray with cooking spray.
In a medium bowl, beat the bananas with an electric mixer until goopy. Ad the rest of the wet ingredients, and blend.
Add the dry ingredients to the bowl, and mix on low until everything is incorporated. Do not over mix.
Fill the prepared liners with muffin batter, about 2/3 full. Place in oven and bake for 18 minutes, or until a toothpick comes out clean.
If using the six-cup muffin tin, redo the process with remaining batter.
Allow to cool. Try to only eat one.
