Grain-Free Sweet Potato Porrdidge

1 small sweet potato, baked

1/4-1/3 cup full-fat coconut milk

1T ground flaxseed

1T hemp seeds

Water, as needed

Optional Savory Spices: Turmeric, salt, pepper, nutritional yeast, thyme

Optional Sweet Spices: Cinnamon, vanilla

Optional Savory Toppings: Soft-boiled egg, avocado, veggie noodles, tomato, sun-dried tomato

Optional Sweet Toppings: Berries, sliced fruit, avocado, seeds, nuts, nut butter


In a sauce pot, mash together the sweet potato with the coconut milk. Heat the pot over medium-low heat and stir. Add the hemp seeds and flax, and add water to reach desired consistency. Occasionally stir and then add desired spices. Bring to a low simmer and then pour into a bowl. Top with desired toppings.
