Chewy yet fluffy, tender yet sweet, these brownies are a perfect little treat with pockets of peanut butter.

Preheat the oven to 350 degrees. Line a 8x8 pan with parchment paper and grease with your favorite cooking spray.
In a bowl, add the coconut oil and chocolate chips. Melt in the microwave for about one minute and stir. The oil should be melted, and the chips should be nearly melted. Stir.
Add in the remaining ingredients, except the peanut butter, and stir until just combined. Pour the batter into your prepared baking pan and spread. It will appear very thin.
Drizzle or blob the peanut butter on top of the batter. Slowly drag a knife through the peanut butter to create artful swirls.
Bake for 15 to 18 minutes. Allow to cool then eat!
