A good snack bar not only has good flavor, but a good texture and crunch. With a combination of puffs, flakes and seeds, these cereal bars have all three. A combination of peanut butter and coconut oil act as the binder, and a little protein powder adds a protein boost. No extra sweeteners required.
Note: When out of the freezer for an extended period of time, they will crumble.
20 Freezing Time
Line an 8X8 baking pan with parchment paper.
In a small sauce pan, add the peanut butter and coconut oil and stir over low heat. Allow to melt and combine. Turn off heat, and add the vanilla, protein powder, salt and cinnamon. Stir.
In a large mixing bowl, add the remaining ingredients. Slowly add in the liquid and stir to combine until everything is coated and mixed together. Press the mixture firmly into the prepared baking sheet. Freeze.
Allow to firm for about an hour. Cut into 16 squares and store in the freezer.
