Yes, this recipe does require prunes, but prunes have a bad rap. When eaten in excess, they may cause...discomfort. (Yeah...let's call it that.) But when combined with peanuts and whirled together, they taste reminiscent of the classic peanut butter and jelly. Loaded with healthy fats, natural sweetness and protein, these bites are perfect for snacks or an easy dessert.
12 to 14 balls
10 organic prunes
1/2 cup peanut butter
2T coconut flour
2T flaxseed meal
1T coconut oil
1/4 cup vanilla protein powder
1/4 cup roasted, unsalted peanuts
Put all ingredients except the water and peanuts in the belly of a food processor. Process until everything is chopped. While running, stream in the water, and let it blend a bit more. It will resemble coarse crumbs. Add in the peanuts and pulse until the peanuts are chopped.
Grab about two tablespoons of the batter, and firmly press it together until it's about the size of a golf ball. (Really mash it into that ball!) Repeat with remaining batter until you have 12 to 14 balls. Store in the freezer for easy snacking.
