Paleo Greek Salmon Burgers

These salmon burgers are packed full of flavor and great either sandwiched in between bread, or topped on a salad!

4 to 6 burgers


2 garlic cloves
1/4 white onion, cut into small chunks
2T Greek olives
1 pound salmon, skin removed and cut into chunks
1T whole-grain mustard
1/4 cup almond flour
2T diced fresh parsley
1t dried dill
1 egg
1t oregano
1t thyme


Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In your food processor, add the garlic, onion and olives. Pulse a few times to chop. Add the remaining ingredients and pulse until well combined, stopping periodically to scrape down the side of the bowl.

You have two options to form the patties: You can either simply scoop out the door and form it into your hands. OR, you can line a medium-sized lid with plastic wrap (spray the wrap with cooking spray) and mold the salmon into the lid. This creates a more uniform patty. Repeat the patty-making process with all the salmon mixture. You'll get four to six patties.

Bake for 15 minutes. Flip. Bake again for five to seven minutes.
