Sometimes, you really do need a sweet treat to quiet the sweet tooth. Whether it be during the mid-afternoon or after dinner, a craving for something sweet can happen at any time. And you need to be prepared. Loaded with autumnal flavors like pumpkin, and without any refined-sugars or grains, this is a dessert you can feel good about munching on.
1 cup almond flour
1/4 cup coconut flour
1t ground cinnamon
1/2t ground ginger
1/4 cup coconut sugar
1/2t baking soda
1/2 cup pumpkin puree
1/4 cup coconut oil, melted
2T pure maple syrup
1t vanilla extract
1/4 cup dark chocolate chips, chopped
Preheat your oven to 350 degrees. Line an 8x8 pan with parchment paper.
In a large mixing bowl, combine the flours, spices, coconut sugar and baking soda. Stir to combine. In a smaller bowl, combine the pumpkin puree, egg, oil, syrup and vanilla. Stir. Combine the wet ingredients in with the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
Spread the mixture into the prepared pan. Bake for 30 to 35 minutes until golden brown. Allow to cool and cut into 16 squares. Try not to eat the whole batch.
