Pumpkin-Spice Snack Cake

Moist, free of refined-sugars and full of flavor, this snack cake is perfect for brunches, easy get togethers with friends or just when you need a little something sweet. It's also loaded with pumpkin, which is a vegetable, so you know it's healthy.

Ingredients

Dry Ingredients
1 cup spelt flour
1/4 cup arrowroot starch
1/2 cup almond flour
1/2t baking soda
1/2t baking powder
1t cinnamon
1/2t ground ginger
1/4t nutmeg
dash all spice
1/4 cup coconut sugar
dash salt
2T chocolate chips


Wet Ingredients
1/4 cup maple syrup
1 egg
1/4 cup coconut oil, melted
1/4 cup almond milk
1/2 cup unsweetened pumpkin puree
1t vanilla extract

Directions

Preheat oven to 350 degrees. Line a baking pan with parchment paper and spray with high-quality cooking spray.


In a bowl, stir together all dry ingredients, except the chocolate chips. In a smaller, separate bowl, add together the wet ingredients. Add the wet to the dry ingredients and stir until just combined. Gently fold in the chocolate chips.


Spread out the cake mixture into prepared pan. Bake for 22 to 25 minutes, until center is set, and when a toothpick is inserted, it comes out clean. Allow to cool and cut into squares.
