Pumpkin-Spice Waffle for One

Waffles are an incredibly easy breakfast to make at home. This one, great for weekday breakfasts, also contains added nutrition from organic pumpkin puree! (Bonus: It's free of gluten!)

1 Serving


1/4 cup organic pumpkin puree
1 egg
3 T brown rice flour
1 T flaxseed meal
1 T almond flour
2 T non-dairy milk
1/2 t baking powder
1 t maca (optional)
1/2 t cinnamon
1/4 t nutmeg
1/4 t all spice
1/4 t ginger
dash salt
dash clove


Plug in your waffle iron to preheat.

In a small mixing bowl, add the puree and whisk in the egg. Add the remaining ingredients and stir until just combined. (Don't over stir) When the waffle iron is preheated, give it a quick shot of cooking spray and add the batter. Cook until desired doneness. Top with pumpkin-spiced wal-mond butter, fruit or more!
