Red Velvet Cake Energy Balls

12-14 balls

Ingredients

1 medium beet, or 2 small
1/4 cup almond milk
2 small dates
1/4 cup coconut flour
1/2 cup cashews
1 scoop chocolate protein powder
1t vanilla extract
2T cacao powder
1T coconut oil
dash salt
2T almond milk

Cacao powder for dusting

Directions

Peel and cube the beet. Steam until soft--about seven to 10 minutes via stove top.

Take a heaping 1/3 cup of the steamed beets and add them to the belly of a food processor. Add the 1/4 cup milk and dates, and blend until nearly smooth. (It may be hard with your processor to completely blend. Just make sure there are not any large chunks of beet. Nobody wants that.) Add in the remaining ingredients (except the dusting cacao). Blend until a soft ball begins to form.

Working one at a time, take out a knob of dough and roll into a ball. They'll be about the size of a ping pong ball. Roll the ball into the cacao powder and set aside. Repeat, roll and dust. 

Store in freezer for easy munching!
