Super Easy Vegan Cheese Sauce (Soak Free!)

You can make a mighty-tasty cheese sauce out of soaked cashews. But a huge problem is that you need to soak the cashews prior to blending in order to soften them. When you want cheese sauce NOW, it can be cumbersome to whip up a batch. However, by making a simple swap, you can prepare easy vegan cheese sauce at home without the soaking! (And it contains ingredients you probably already have on hand.)

2 to 4 servings


1/4 cup roasted cauliflower
1/4 cup roasted squash or 1/4 cup pumpkin puree
1 garlic clove
1/2 cup + 2T almond milk (or broth to make it nut free!)
2T hemp seeds
3T nutritional yeast
1T lemon juice
salt/pepper/cayenne to taste


In a blender, add all ingredients. Blend until smooth. If you want a runnier sauce, add more liquid. Adjust spices to taste.
