Sweet Potato Pancakes for One (With Chocolate Protein Fluff)

Perfect for both weekends and weekdays, these no-fuss pancakes are great for those who want that diner treat without all the processed ingredients and fuss. 

Cooking Time

For the Pancakes:

1/4 cup mashed sweet potato

1 egg

1T flaxseed 

1T almond flour

2T brown rice flour

6T milk

1/4t baking powder

dash salt

dash cinnamon 

For the Fluff:

3T nut milk

2T chocolate protein powder

1T nut butter


Heat a skillet over medium-low heat. Set your oven to a low 250 degrees. 

In a bowl, mash the sweet potato with the egg. Add the remaining ingredients and stir. 

Spray your pan with a little cooking spray. Using the quarter cup, scoop out batter into prepared skillet. Allow to cook until bubbles begin to form. Flip and cook for three to four minutes. Place finished pancakes in warm oven. Repeat with remaining batter. You should get about five pancakes.

To prepare the fluff, in a small bowl, mix together all ingredients. You may need to add more milk to reach desired consistency.

Once all pancakes are cooked, top with fluff and chow down!
