Sweet Potato Protein Waffle

Proteins are the building blocks of life. We need them to function everyday. They help regulate our hormones, repair our tired muscles and even compose our hair and nails! This waffle is easy, as it is single-serving, and allows one odd ingredient to shine--chickpea flour! Chickpea flour is loaded with natural, plant-based protein. When mixed with other flours, powders and mix-ins...you get a fluffy waffle and a nutritious breakfast.

One Serving


1/4 cup mashed sweet potato (or 1/2 mashed banana)
1 egg
1 egg white
3T chickpea flour
1T flaxseed meal
2T vanilla protein powder
1T brown rice flour (or flour of choice)
1T almond milk (or milk of choice)
dash of salt and cinnamon
1/2t vanilla extract
1/2t baking powder


Pre-heat your waffle iron.

In a bowl, mix together the sweet potato, egg and egg white. Whip until combined. Add the remaining ingredients and still until just combined. You may need to add an extra splash of milk, depending on how dry your batter is.

Once the waffle iron is pre-heated, add in your batter. (You may need to do in this two batches to avoid any extra batter from falling out the sides. That just means you get a bonus waffle!) Cook until golden brown.

Top with yogurt, berries, peanut butter, seeds or any other tasty toppings!
