Trail Mix Waffles

These waffles are loaded with all the good stuff--nuts, coconut, banana, whole grains, cinnamon, flax, and so much more. This waffle is great for breakfast, or can be made and cut into bars for a snack!

Cooking Time

10 minutes




1 banana
2 eggs
1/2 cup almond milk
1t vanilla extract
1/3 cup spelt flour
2T flaxseed meal
1t cinnamon
dash salt
1T chopped almonds
1T unsweetened coconut flakes
1T raisins
1T sunflower seeds
1T pumpkin seeds
1T dairy-free chocolate chips
2T rolled oats


Pre-heat your waffle iron.

In a small bowl, mash the banana. Add the egg, and beat until combined. Add in the remaining ingredients and stir until just combined. 

Once your waffle iron is heated, coat it with cooking spray, and add half of the batter. Cook until golden brown. Repeat with remaining batter. 

Top with whatever you'd like...then devour!
