Zesty Beet Gazpacho

Don't let the idea of beets intimidate you: Although they have a very potent flavor, they can be incredibly sweet and delicious. When paired with earthy flavors like onion, and hydrating flavors like tomato and cucumber, the beets work together with the other ingredients to create a soup that is not overpowering in flavor.

Yields

4-is cups

Ingredients

1 cup peeled, cubed beets
1 cup chopped cucumber
3 medium tomatoes, largely chopped
1/3 white onion, diced
3 cloves garlic
1/2 cup water
1 jalapeno, seeds removed
1t paprika
salt/pepper

Directions

Fill a large pot with about an inch of water an add a steamer basket. Place the beets in the basket, cover and steam for 15 minutes until tender. Rinse the beets in cold water and allow to cool.


Once the beets are cooled, add the remaining ingredients to a high-speed blender, and puree until smooth. Adjust salt and pepper as necessary.


Serve chilled.
