Zucchini Brownie Waffle

I know vegetables in brownies seem weird...but trust me. The addition of zucchini adds moisture and a beautiful tenderness. If you're weird about the texture of the zucchini itself, shred it at a smaller sized grate. This waffle is also naturally gluten-free, and contains zero refined sugar!

And don't let the ingredient list intimidate you. Where these may be odd ingredients, they are great pantry staples. 

Cooking Time

2 Waffles


1T dark chocolate chips
1t coconut oil
1 egg
2T unsweetened applesauce
1/3 cup almond milk
1/3 cup chickpea flour
1/4 cup hemp powder
1T coconut sugar
2T flaxseed meal
1T cacao powder
1t vanilla extract
1/2t baking powder
dash salt
1/3 cup shredded zucchini


Preheat your waffle iron. In a small microwave-safe bowl, add the chocolate chips and the coconut oil. Microwave for 30 seconds, and stir. Repeat process until the chips have melted.

In a bowl, add the egg and stir until beaten. Add the remaining ingredients except the zucchini and melted chocolate chips. Stir until just combined. Then, gently fold in the grated zucchini and melted chocolate. 

When your waffle iron is preheated, spray with high-quality cooking spray and add in half the batter. Cook until it has reached your desired doneness. Remove the waffle, respray and add the remaining batter. Again, cook until tender.

Top with peanut butter, protein fluff, berries...or whatever else!


If you do not have a waffle iron, you can add a bit more milk to create a runnier batter. Then, make pancakes!
